Mini Fruit Pizzas

Individual Fruit Pizzas are a great dessert for a bridal shower or baby shower or really, any kind of party or get-together. You can make the cookies and the spread ahead of time and just put the fresh fruit on at the last minute.  Or, what’s fun is to have all of the components set up and allow your guests to put together their own!

The cookies are soft and the cream cheese fruit spread is flavorful and creamy.  The fruit is the star of the cookie.

Here’s the cookie recipe:

Cream together:

1 ½ c. powdered sugar (YES, powdered sugar!)
2 cubes margarine, softened
1 egg
1 t. vanilla
½ t. almond flavoring

Mix in the following, just until a soft dough forms (do not over mix or dough will become tough.)

3 level cups flour
1 t. baking soda
1 t. cream of tartar

Chill dough for several hours. Sprinkle flour on counter top. Roll out dough about ¼” thick. Use a cookie cutter to cut out the rounds. Place cookies at least 1” apart on a baking sheet lined with Parchment Baking Sheets.  Bake 10 minutes at 350°.  Be careful not over bake. The cookies should not get brown – not even on the edges!  Let cool completely.

Creamy Spread:

8 oz. cream cheese, softened

1 T grated orange rind

1 c. powdered sugar

8 oz. Cool Whip

Spread onto cooled cookie and top with any kind of fresh fruit you love.  See the photo above.
