Zucchini on the Grill

I love when the weather is nice outside and we can make our meals outside on the grill. My husband loves a nice, juicy steak, but I love some tender grilled chicken with grilled vegetables! Have you ever noticed that zucchini is one of those vegetables that people either love or they don’t! I love it, my husband doesn’t. (I think it’s because his grandma tried to hide grated zucchini in his pancakes when he was a kid!) Anyhow, as long as I don’t try to trick him into eating it, he will take a bite. And he doesn’t hate it!

To grill zucchini, cut it lengthwise into 1/4″ thick slices. Mix up equal parts of olive oil and balsamic vinegar and brush on both sides. Sprinkle with Smoked Sea Salt (available in specialty stores or on Amazon.com.) By the way, the Smoked Sea Salt is great for anything on the grill – it intensifies that smoky grill flavor! Mmmm…

Lay the slices diagonally on the grill over medium-high heat for about 4 minutes each side, or until it’s tender and has beautiful grill marks!

That’s it! Isn’t that about the easiest recipe ever?

Here is another variation:

Stir in a little bit of dried thyme and garlic powder into the olive oil and balsamic vinegar before brushing on the zucchini. Sprinkle with plain salt and pepper or Smoked Sea Salt.
