Veggie Pizza

Once a year, our extended family gets together for an Hors Doevres party (no meal, just Hors Doevres!) My niece always requests this one! This is just about everybody’s favorite appetizer. No matter how much I bring to a party, my platter will be emptied! 

I have listed the veggies I like to put on mine, but you can use any fresh veggies you like!  

2 – 8 count Pillsbury Crescent Rolls 

2 – 8 oz. pkgs. cream cheese, softened

½ c. mayonnaise

1 pkg. ranch dressing mix, dry

Press crescent rolls flat onto a greased cookie sheet (jelly roll pan.) Bake as at 375°, 9-11 minutes or until golden. Set aside to cool. Meanwhile, combine cream cheese, mayonnaise and ranch dressing mix. Gently spread onto cooled crust. Top with your choice of:

Shredded carrots
Sliced olives
Diced bell pepper
Diced tomatoes
Sliced cucumbers (quarter and slice thin)
Any other veggies such as broccoli, celery, etc.)

Press the veggies down into the cream cheese. Chill and cut into squares.

I usually prepare the crust the day before and cover it with foil. Then add cream cheese mixture and veggies just before serving.
