Szechaun Broccoli

Broccoli is one of those veggies that people either love or they don’t. I happen to love it! When I was a kid (before bottled ranch dressing!), we used to spread a thin layer of mayonnaise on our cooked broccoli and sprinkle it with salt and pepper. Sure globbing on some ranch dressing or mayonnaise gives broccoli a nice flavor, but it adds fat and calories. This recipe for Szechuan Broccoli adds flavor and a little bit of heat and keeps it healthy. It’s a great side dish – but can also be made into a main dish by adding chicken or beef.

Szechuan Broccoli-

Szechaun Broccoli
  1. 1 tablespoon soy sauce (I like to use the low sodium)
  2. 1 tablespoon rice vinegar
  3. 1/2 teaspoon sugar or honey
  4. 1/2 teaspoon freshly grated ginger
  5. 1/2 teaspoon minced garlic
  6. 1 tablespoon toasted sesame seeds
  7. 1/2 teaspoon crushed red pepper
  8. 5 cups broccoli, cut into small florets ("Blanched" in the microwave*)
  9. 2 teaspoons oil
  1. Begin by "blanching" the broccoli in the microwave. Put the florets into a large microwave safe dish, add 1/2 cup water and cover. Microwave 1 minute. Drain.
  2. In a small bowl, combine all ingredients except for the broccoli and oil. Set aside. Heat a Wok or large skillet over medium heat.
  3. Add the blanched broccoli to the wok and stir fry for 1 minute. Add the soy sauce mixture and stir to coat the broccoli pieces. Cover and cook about 2 minutes on low heat until the broccoli is crisp-tender.
  4. To serve, sprinkle additional toasted sesame seeds and crushed red pepper.
  1. *This can also be made into a main dish by adding cooked chicken or beef and serving over hot steamed rice.
