Swedish Meatballs

Ultimate Comfort Food right here folks! Swedish Meatballs are one of my favorite comfort foods! I’m not sure if this is an authentic recipe from Sweden, but it is delicious! Anything that’s creamy or covered in gravy or sauce is comfort food!

The meat mixture has one surprising ingredient that I have never seen in meatballs. Baking powder! I think it gives the meatball a lighter texture. These meatballs are so good served over rice or buttered noodles. (better yet…homemade noodles!) HERE is a recipe for easy homemade noodles. They will put your meal over the top!

1 lb. ground beef
2 T. chopped onion
½ c. milk
2 beaten eggs
4 slices bread, torn into small pieces
1 t. salt
½ t. pepper
2 t. baking powder

Mix well using your hands or a Pampered Chef Mix N Chop. (I bought mine at a Pampered Chef party, but it is also available on Amazon.com. I love this thing! It mixes up the meat better than I can do it with my hands.

Use a 2-Tablespoon Stainless Scoop to form the meatballs. (When they are evenly sized, they will cook more evenly.)

(You will get about 18 meatballs.) Bake them on a foil lined, greased baking sheet at 350° approx 20 – 25 minutes or until done. Transfer to a greased casserole dish. 

Mix up the Gravy:

1 can Cream of Mushroom soup
1 can Cream of Chicken soup
¾ c. milk

Pour sauce over meatballs. Sprinkle with crushed potato chips.

Bake covered about 10 minutes at 350°, then uncover and bake another 10 – 15 minutes or until the sauce bubbles and meatballs are heated through. The potato chip crumbs will get all golden and crispy!

Serve with rice or buttered noodles. Makes about 4 – 6 servings.
