Sumi Salad (A Potluck Favorite!)


You know how when you go to a BBQ or Potluck, the main dish is good, but the best part is the huge selection of salads that everyone brings? I have been known to skip the burger or sandwich and just load up my plate with all of the delicious salads! This one is definitely a favorite. Every time I make this salad for a potluck, it gets gobbled up and my bowl comes home empty! I can guarantee you that it’s unlike any other salad on the table!

Here’s how to make it:

1 medium-large head cabbage, remove core and slice it thinly

1/4 c. slivered almonds (add these just before serving)

1/4 c. toasted sesame seeds

4 green onion tops, sliced

1 pkg. uncooked Ramen Noodles (discard the seasoning packet!)

Combine the cabbage, sesame seeds and green onions in a large bowl. Keep in the refrigerator until you are ready to serve. 

Dressing:

1/4 c. sugar

1 t. pepper

1 t. salt

6 T. rice vinegar

1/2 t. sesame oil

3/4 c. vegetable or canola oil

Put all ingredients except the vegetable oil into a shaker bottle with a lid and shake until well blended. Add the oil last. Refrigerate until serving time. Just before serving, shake the dressing again and toss the cabbage mixture with the dressing. Lastly, toss in the almonds and crumble in the un-cooked Ramen Noodles into the salad and serve.
