When my daughters were in high school, they played sports. It seems like they were ALWAYS hungry for a quick snack when they got home from practice. I used to make these Special K Snack Bars all the time! I like that they are made with peanut butter and Special K cereal. They seem a little healthier than other goodies. Now, you can buy a High Protein Special K which is supposed to satisfy hunger longer! These are a great treat to keep on hand for hungry kids!
They are really quick to make. Here’s the recipe (this makes a 13 x 9″ pan*)
¾ c. light corn syrup
½ c. brown sugar
1/3 c. peanut butter (we like chunky, but you can use creamy)
5 c. Special K Cereal
Begin by measuring the Special K into a large bowl. Set aside.
In a large pan, combine corn syrup, brown sugar. Heat over medium heat until bubbly. Remove from heat and stir in the peanut butter.
Pour over cereal and stir carefully, making sure all pieces are coated with the gooey goodness!
Press into a greased 13 x 9″ pan.
Allow to cool. Cut into squares.
(I love to use this commercial quality quarter sheet pan. This works well for well for bar cookies and such. The size is 13 x 9 1/2 x 1″ .)
