Shepherd’s Pie

This Shepherd’s Pie is so easy, I think I will re-name it “Easy As (Shepherd’s) Pie! This is the recipe my mom used to make and it was always one of my favorite dinners when I was a kid! I like comfort foods and the golden, crispy mashed potato topping on this Shepherd’s Pie makes it a comfort food indeed! Kids love it. (And husbands love it!)

1 lb. ground beef

1/2 yellow onion, diced

1 tablespoon Worcestershire sauce

1 can cream of tomato soup

1 can French style green beans, mostly drained

salt and pepper to taste

2 1/2 – 3 cups prepared mashed potatoes, heated

Add a drizzle of oil to a skillet and brown the ground beef and diced onion. Drain fat. Add the Worcestershire sauce, the tomato soup and green beans. Heat together over medium heat until bubbly.

Pour into a greased casserole dish.

Top the hot beef mixture with with the heated mashed potatoes. Broil just until the mashed potatoes are golden and crispy.

Makes about 4 servings.
