Microwave Caramel Corn

Salted Caramel Popcorn (in the microwave!) ~ with Free Printable Labels

This has got to be one of the yummiest and easiest treats to make. It’s all done in the microwave and it doesn’t make a big mess in the kitchen!  You start with a bag of microwave popcorn and in 10 minutes, you’re done!  This Caramel Popcorn is so quick and easy you’ll want to make it all the time!

I have included some free printable labels in case you need a quick “thank you” gift, an inexpensive birthday treat for a neighbor or a “just because” gift! 

I keep a supply of these Clear Cellophane Bags for things like this. You can use these bags for cookies, candies or other goodies and tie them with some cute raffia or ribbon and you have a great gift!

Here’s the instructions:

1 bag microwave popcorn, popped (or 6 cups)

1 c. mini marshmallows

1/2 c. brown sugar

1 stick unsalted real butter (not margarine!)

Pop popcorn according to directions. (Remove any un-popped kernals) Set aside. In a large microwave safe bowl, melt the butter.

Add the brown sugar and marshmallows. Microwave on high 2 minutes, stirring after 1 minute. Microwave 2 more minutes. 

Caramel for Popcorn

Using a wire whisk, beat until smooth. Pour popcorn into the bowl and stir well to coat. Pour out onto waxed paper or parchment lined baking sheet, sprinkle with sea salt (if desired) and allow to cool. Break into pieces. Delicious!

    Have a question : Can you use a jar of marshmallows in place place of the mini-marshmallows? The only reason this I ask is because I want to make this NOW! And it’s the only thing I have on hand right now and it’s almost midnight! lol

      I have not ever tried it using marshmallow creme, so I’m not sure. Because I’m one who likes to experiment with recipes, I would probably go ahead and try it!
