Rocky Road Fudge - just like Grandma's

For as long as I can remember, my mom has made this Rocky Road Fudge at Christmas time.  (And I’m a grandma now, so it’s definitely been a really long time! 50+ years, I’m guessing!) This must be where I learned to love chocolate and peanuts (and fudge!)  

This Rocky Road Fudge recipe is so simple to make.  In fact, I would say it’s fool proof!  This turns out perfectly creamy and chocolate-y every time.

My mom came to spend the night here with us on Christmas Eve and at my request, she made a batch of this “deliciousness” for our gathering on Christmas day.  By the time all of the visitors had come and gone, the entire platter was empty!  Everybody loves this!

Here’s her recipe:

2 t. butter

1 can sweetened condensed milk (not evaporated milk)

1 bag milk chocolate chips

1 bag mini marshmallows

½ jar salted peanuts

Put the butter and sweetened condensed milk in a microwave safe bowl and microwave just until the butter is melted and the mixture is hot (about 1 minute or so.) Add the chocolate chips and stir until completely melted.  Fold in the marshmallows and peanuts and spread evenly into a greased 13 x 9” pan.  Allow to set. Cut into small squares and serve on a pretty platter.

This is a perfect holiday goodie or you can make it anytime you want a chocolate treat!
