It has been a HOT Summer! Where I live, we have had record breaking heat! On these 100° days, I want something frosty and refreshing to eat. You can’t beat this Frozen Fruit Salad when it comes to a refreshing side dish for a BBQ or just for your weeknight meal.
When I was a kid, my mom would freeze canned fruit cocktail in those aluminum ice cube trays and slush it up just before dinner. I always looked forward to that. This is a little bit fancier version!
It doesn’t take much effort, but the slushy fruit is such a treat! This can be made ahead, so it’s great for entertaining. Just take it out of the freezer about 20 minutes before serving time and break it into smaller pieces with a fork. Serve immediately.
Here’s what you need:
2 c. fresh strawberries, sliced
1 can pineapple chunks or tidbits (with the juice)
3 medium ripe bananas
1 can DOLE Orange-Peach-Mango Juice Concentrate (do not dilute)
1 – 12oz. can Sprite
That’s it! Stir these all together in a bowl and put it into freezer containers for several hours or overnight. (Don’t worry that there is too much juice. It freezes and makes a nice slush to surround the frozen pieces of fruit!)
Since my husband and I are empty-nesters, I usually freeze this in 3 smaller containers so we can eat some for a meal and still have some more on hand for another time!
