When my kids were little, I loved any kind of quick and easy dinner ideas. Here is one that I made often, since my kids loved chicken drumsticks (and what kid doesn’t?) They can hold them in their hand to eat (just keep some napkins handy!) You just season them and pop them into the oven! Meanwhile, cook some rice and steam some veggies and you have a quick and nutricious dinner! Chicken drumsticks can be seasoned with many different things, but this was always our favorite!
Just before roasting, sprinkle the drumsticks with:
a little bit of Smoked Sea Salt
Put the drumsticks into a shallow pan (I just use a regular 13 x 9″ pan) and place them into a 375° oven for about 40 minutes. (If you are using a convection oven, preheat to 350°.) When done, stick a sharp knife into the drumstick. The juices will run clear (not pink) and the internal temperature should reach 180°. (If you have a Quick Read Thermometer it’s great for checking the temp!)
Brush (or spoon) onto the drumsticks some of your favorite BBQ sauce and return to the oven for an additional 5-10 minutes. Allow to rest about 5 – 10 minutes before serving.
