Pumpkin Cookies with a surprise ingredient


I love pumpkin cookies with chocolate chips AND raisins. So I thought, why not try using Chocolate Covered Raisins instead. When it comes to cooking and baking,  I’m one of those people who figures I might as well try my crazy new ideas. What’s the worst thing that could happen?  So I tried it!  The results are amazing! The chocolate coating melts and the raisin stays plump and chewy! Score that a win! 

My husband is not a big fan of raisins, but when they’re chocolate covered, it doesn’t take much convincing!  But who has to be convinced to eat a cookie anyway?  Not me!

Here’s my recipe:

½ c. shortening
1 c. sugar
1 egg
1 c. canned pumpkin
1 T. grated orange peel
2 c. flour
1 t. baking powder
1 t. soda
1/4 t. salt
1 t. cinnamon
1/2 t. vanilla
1 1/2 c. Chocolate Covered Raisins
1/2 c. nuts (optional)

Cream shortening and sugar. Add egg, pumpkin, orange peel and vanilla. Sift dry ingredients together and mix into pumpkin mixture. Do not over-mix.

Add the chocolate covered raisins.  Using a Cookie Scoop, drop mounds of dough onto a parchment lined baking sheet.  Bake at 375° 8-11 minutes or until done.  Allow to cool on wire rack.
