Cheesecake is one of my favorite desserts, but it is loaded with fat and calories. I have come up with a way to get a NO-BAKE creamy little cheesecake treat with very few calories. The secret to its low calorie status is that it’s made with Greek Yogurt instead of cream cheese. It gets it’s cheesecake flavor from the Sugar-Free Jello Instant Cheesecake Pudding!
I do have a SECRET ingredient that I’m going to share. It’s a thickener called Ultra Gel. This instant modified food starch is made from corn. It’s gluten free and it instantly thickens either hot or cold liquids. I have used it as a thickener for fruit pies and to thicken soups and sauces. This is so versatile. It makes it easy to prepare low-calorie versions of my favorite things.
Everyone should have this in their pantry!

Okay, back to the Cheesecakes. Calculating the calories in the mini-cheesecakes, I figure they have about 110 calories per cheesecake!
Here’s how to make these delicious little No-Bake “cheesecake” treats:
1 24-oz. container Greek Gods Vanilla Honey Yogurt
1 small package Jello Instant Cheesecake Pudding (Sugar-Free/Fat-Free)
9 Nilla Wafer Cookies
Get out your little handheld mixer. In a medium sized bowl, put in the entire container of yogurt, the dry pudding mix and the Ultra Gel Instant Thickener. Mix on low speed for 1 minute. (You will see it start to thicken immediately.)
Place a Nilla Wafer into the bottom of each of 9 foil baking cups. Using an ice cream scoop, “plop” equal amounts of the cheesecake filling into each cup. Smooth with an offset spatula if desired. Cover with foil and refrigerate several hours or overnight. (The Nilla wafers will soften as they chill and create a nice crust.)
Top with fresh berries! Enjoy!
