These moist chocolate muffins are made with just 2 ingredients. One of the ingredients is a bit surprising. It’s canned pumpkin! You cannot taste the pumpkin at all! All you can taste is a moist chocolate muffin! The pumpkin adds not only moisture, but lots of fiber and vitamin A. (The kids will have no idea, so don’t tell them!) The pumpkin replaces the eggs, oil & water!
Here is the recipe. Get out a paper and pencil. You’re going to want to take extensive notes!
1 box Devil’s Food Cake Mix, dry
1 small can Pumpkin
Stir together the dry cake mix and the pumpkin puree with either with a spoon (by hand) or use an electric mixer. Just mix until the cake mix and pumpkin are completely incorporated. The batter will be very thick. Almost like brownie batter.
Fill 12 muffin cups equally and bake at 350° for about 18-20 minutes. Test the doneness by tapping your finger on the top of the muffin. If it springs back, they are perfectly done.
Allow to cool. Serve with a glass of cold milk.
Each muffin only has approximately 135 calories!
