Mini Fruit Pizzas

Individual Fruit Pizzas are a great dessert for a bridal shower or baby shower or really, any kind of party or get-together. You can make the cookies and the spread ahead of time and just put the fresh fruit on at the last minute.  Or, what’s fun is to have all of the components set up and allow your guests to put together their own!

The cookies are soft and the cream cheese fruit spread is flavorful and creamy.  The fruit is the star of the cookie.

Here’s the cookie recipe:

Cream together:

1 ½ c. powdered sugar (YES, powdered sugar!)
2 cubes margarine, softened
1 egg
1 t. vanilla
½ t. almond flavoring

Mix in the following, just until a soft dough forms (do not over mix or dough will become tough.)

3 level cups flour
1 t. baking soda
1 t. cream of tartar

Chill dough for several hours. Sprinkle flour on counter top. Roll out dough about ¼” thick. Use a cookie cutter to cut out the rounds. Place cookies at least 1” apart on a baking sheet lined with Parchment Baking Sheets.  Bake 10 minutes at 350°.  Be careful not over bake. The cookies should not get brown – not even on the edges!  Let cool completely.

Creamy Spread:

8 oz. cream cheese, softened

1 T grated orange rind

1 c. powdered sugar

8 oz. Cool Whip

Spread onto cooled cookie and top with any kind of fresh fruit you love.  See the photo above.

    instead of rolling and cutting–could it be rolled into large circle and put on pizza pan for fruit pizza?

      Yes you sure could, but you would just need to adjust the baking time. I have made a large fruit pizza before, I just like the mini size for a buffet because they are easy to serve.

    I plan to make these with an easter egg cookie cutter and use blueberries, strawberries, kiwi and other fruit in a striped formation to simulate an easter egg.

    I make something similar to these, but press the cookie batter into a large cookie sheet, bake and cut into squares. I’m planning on making these this week for a party. Dont have a lot of time so I am short cutting this recipe and using store bought cookies. I think my friends will love them! Thanks for the recipe!

    Thanks for the recipe. Do you know if the cookies freeze well? i plan on making these but I only have 2 in the house so I was thinking of freezing some so I can just take them out and add topping as needed for afterschool snacks. Again thanks.

      You can freeze them. Like you said, I think it would be best to add the toppings as needed.

    I make a fruit pizza with a croissant with a cream cheese and conf sugar and vanilla and coolwhip. Blend than top it with kiwi stawb and blue. Whatever you like.
