One Saturday afternoon, a few years ago, my daughter brought me a thoughtful gift. It was a DisneyWorld Cookbook she bought at a yard sale! She knew how much I loved cookbooks! It probably cost her no more than 50 cents, but it has some of the best recipes! For example, these MEATBALLS! The meatballs are delicious with spaghetti, but my favorite way to eat them is as a Meatball Sub!
Here’s how to make the Meatballs:
1 ½ lb. ground beef
½ lb. mild Italian sausage
¼ c. onions, minced
½ c. bread crumbs
1 egg, beaten
¾ c. water
1 t. salt
½ t. pepper
2 t. oregano
1 t. dried basil
1 ½ t granulated sugar
2 t. dried parsley flakes
¼ c. Parmesan cheese, grated
Knead all together and form into balls about the size of golf balls. Place on a foil lined baking sheet that has been sprayed with non-stick cooking spray. Bake 15-20 minutes at 350° or until firm to the touch.
Put the meatballs in a casserole dish and cover the meatballs with your favorite (heated) spaghetti sauce. (HERE is my recipe for my favorite sauce!) You can use the kind in a jar if that’s what you like. Keep the meatballs hot while assembling the sandwiches.
Start with french rolls or sub rolls. Cut off the top 1/3 of the roll and hollow out the roll. (Leave a margin of about 1/2″.
Fill the hollowed out portion with grated Mozzarella cheese.
Broil just until the cheese is melted and the roll is golden. (I like to broil the top 1/3 of the roll. the “lid” too.)
Fill the rolls with the sauce covered meatballs and top with more Mozzarella.
Put the “lid” back on and serve hot.
