I think these are called “Hurry-Up Cookies” because they can be made in a hurry! There’s not much to them, so they’re quick. In fact, they are ridiculously quick!
I took these to a bridal shower for one of my co-workers a few months ago and they were a huge hit! Everyone wanted the recipe. Of course, with only 4 simple ingredients, I was able to easily recall the recipe and share it.
You won’t believe how incredibly yummy these are. And if you think about it, they are relatively low in fat!
3 c. graham cracker crumbs
1 can sweetened condensed milk
½ bag semi sweet chocolate chips
1 c. sweetened, shredded coconut
Crush graham crackers into fine crumbs (I crumble them into the blender or food processor and pulse – or you could put them in a heavy plastic bag and pound them into fine crumbs.) Measure 3 c. of the crushed crackers and put in a bowl. Pour in the sweetened condensed milk and chocolate chips. They will be a bit sticky. Roll into balls (about 1” in diameter.) Then, roll the balls in coconut.
Place on a parchment lined baking sheet or a Silicone Baking Mat and bake at 350° for about 12-13 minutes or until coconut is toasted and cookies are just set. Cool on a wire rack.
For some reason, these taste better when they’re cool.
