Hmmm…what to have for breakfast…Pancakes or Granola? How about both! My husband and I went to breakfast one Saturday morning and on a whim, I decided to order the Granola Pancakes. Normally, I’m not one to choose pancakes, but the thought of granola in pancakes sounded good. As I bit into them, I realized, I had make a good choice! They are very hearty and will stick to your ribs!
I came up with my own version that are made with Krusteaz Whole Wheat N Honey Pancake Mix. I like simple recipes. (This pancake mix is a complete mix – the directions say to add water. I added water and milk for extra richness.)
Here’s how I make them:
1 1/4 cups Krusteaz Whole Wheat N Honey Pancake Mix
2/3 cup Granola*
1/2 cup water
1/4 cup + 1 tablespoon milk
1 teaspoon vanilla
Stir the granola into the dry pancake mix.
Add the wet ingredients all at once. Stir just to moisten.
Allow the batter to stand about 2 minutes.
Meanwhile, heat up the griddle to 375°. (I like to use my electric griddle. I just set the temperature and it cooks them perfectly!)
When I make pancakes, I put about 1/2 teaspoon of oil onto the hot skillet and then drop the pancake batter directly onto the little circle hot oil. The oil immediately spreads out underneath the batter as it’s poured on and it makes a pretty pancake!
Cook for a minute or two or until the edges begin to look dry. Flip over to cook the other side for an additional minute or two.
Serve with hot maple syrup or fresh fruit (or both!)
*You can use any prepared Granola, but in case you need this, HERE is my recipe for Homemade Microwave Granola! (It’s also good on it’s own or on top of yogurt!)
