Grandma’s Best Guacamole

My husband absolutely LOVES guacamole. It doesn’t matter what it’s on, he loves it. (He doesn’t know it, but avocados are good for him!) They are full of carotenoid antioxidants—lycopene and beta-carotene! (Whoaaa, that’s a mouthful!) Anyhow, avocados are high in fat, so they sometimes get a bad rap, but keep in mind that they are “good” fats! “Good fats” help us feel full and satisfied, so we tend to eat less after eating them. Avocados have been shown to have anti-inflammatory benefits, they support cardiovascular health, promote blood sugar regulation and have anti-cancer benefits. Hmmm…seems like we should be eating avocados more often! 

Here is a delicious way to use avocados…Make Guacamole! 

2 ripe avocados, peeled an pit removed

Juice of a fresh lime

1/4 cup fresh salsa (or Pico de Gallo, if you like it chunky)

Finely chopped cilantro (optional)

salt and pepper to taste

Mash the avocado on a plate using the tines of a fork. Drizzle with the lime juice and mix together. (The acid in the lime juice will help to prevent the mashed avocado from turning brown.)

Stir in the salsa. By the way, HERE is a great recipe for a restaurant style blender salsa that’s easy to make and it’s delicious! (Since this recipe of salsa already has the cilantro in it, I leave the cilantro out when making the guacamole.)

Add salt and pepper to your taste.
