This Chicken Salad recipe is the perfect dish for a luncheon or a shower. The presentation when served on this tomato flower is so cute and it just screams “chick food”, don’t you think?
This recipe will make about 2 servings (but you can double or triple it for however many servings you need.)
1 cup diced, cooked chicken* (or rotisserie chicken)
1/2 cup diced celery
3 – 4 green onion tops (you can use the white part too if you like a stronger flavor)
1/4 c. slivered almonds
1/3 – 1/2 cup mayonnaise (give or take)
Stir the first 5 ingredients together:
Then add the mayonnaise.
Refrigerate several hours before serving to allow the flavors to come together.
Just before serving, make the tomato “flowers” using the best, ripe tomatoes you can find!
(I use a couple of chopsticks to keep my knife from slicing all the way through the tomato.) Slice the tomato into 8 equal wedges (making sure that the bottom stays intact.)
Allow the tomato to fall open into a “flower!”
Fill with a scoop of the delicious Chicken Salad!
