Fruit Salsa with Baked Cinnamon Crisps


This is the perfect appetizer or snack for summer! Fresh fruits with crispy baked cinnamon crisps are so inviting and so satisfying.  Yet you feel like you have eaten something healthy.  The chips are easy to make and can be made ahead of time.

The salsa is best when served up fresh.  Believe it or not, this doesn’t require much effort make.  My husband gave me a Chop Wizardlast fall when I was making salsa.  It is so quick and easy to use.  I love this thing!

There’s no tedious chopping and all of the fruit comes out diced in a uniform size.  I put this fruit salsa together in less than 5 minutes!

I pt. fresh strawberries

1 medium size plum

1 small can pineapple tidbits, drained (or you can use crushed)

1 – 2 medium kiwis

1 small ripe mango

1 T. brown sugar

2 T. raspberry jam (or whatever flavor jam you like)

Put the fruit through the Chop Wizard (or dice by hand.) Stir together with the jam and brown sugar.  Serve it up right away with home baked cinnamon crisps!

Cinnamon Crisps

8 large flour tortillas

butter flavor cooking spray

cinnamon sugar (1/2 c. sugar + 1 T. cinnamon)

Spray the top side of the tortillas with cooking spray.  Cut into wedges.  Place on a parchment lined baking sheet. Sprinkle the wedges with cinnamon sugar.  Bake at 350° for about 10-12 minutes until crispy and starting to turn golden.  Remove from oven and allow to cool.
