Stromboli is a filled, jelly roll type dish made of pizza dough and filled with different kinds of fillings. My favorite Stromboli is made with a spinach-cheese filling. If you think that sounds complicated, think again. I like to put together easy meals and this is one of the easiest, though it looks like I spent a lot of time making it.
I used my own homemade pizza dough, although you can use frozen bread dough. Just thaw it out and when it’s cold to the touch you can form it into a Stromboli. You won’t believe how easy it is to make the filling.
I buy this Stouffer’s Spinach Souffle in the freezer section at my grocery store. I cook it according to the microwave directions and allow it to cool. Then to assemble the Stromboli, I spread this onto the dough and sprinkle it generously with Mozzarella and shredded Parmesan cheeses. The braiding looks fancy, but here’s how it’s done. I doesn’t get much easier!
Roll out the dough into a 10 x 14″ rectangle. Place the filling down the center and cut 1″ strips on either side. Then, just alternate strips over the filling until completely braided. Brush the top with an egg that has been beaten with 1 T. water. Sprinkle lightly with garlic salt and parsley flakes. There is no need to let it rise. Just pop it in the oven.
1 recipe of pizza dough (or 1 loaf frozen bread dough, thawed)
1 pkg. Stouffers Spinach Souffle (prepared in microwave), & cooled
1 ½ c. grated mozarella cheese
1 egg, beaten + 1 T. water
Roll dough into a 10 x 14” rectangle. Spread on the cooled spinach souffle over the center third of the rectangle. Sprinkle with cheeses. Braid as shown.
Place on a parchment lined baking sheet. Brush outside of stromboli with egg wash. Bake 18 – 22 minutes at 425° or until golden.
You can fill this with anything you like, italian sausage, pepperoni, mushrooms, etc.
