Easy Spanish Rice

Spanish Rice is the perfect side dish that I like to serve with enchiladas or tacos. It has a nice flavor, not too salty or spicy, like some boxes of ready-to-cook Spanish Rice that you buy at the grocery store. It is easy to make and tastes way better than the packaged kind!

Easy Spanish Rice
  1. 1/4 green bell pepper, diced
  2. 1/4 yellow onion, diced
  3. 2 tablespoons oil
  4. 1 cup uncooked white rice
  5. 2 teaspoons dry taco seasoning (from a package)
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon ground cumin
  8. 1 – 8oz. can tomato sauce
  9. 1 cup + 2 tablespoons water
  1. Saute the diced onion and peppers in the oil over medium heat until they begin to soften.
  2. Stir in the uncooked rice and turn up the heat. Stir the dry rice and the onions and peppers over medium-high heat for 2 – 3 minutes.
  3. Add the seasonings and stir. Slowly add in the water and the tomato sauce (careful, it will sizzle and sputter!)
  4. Cover and bring to a boil, then turn the heat to low and simmer 20 minutes. (Don’t peek while cooking!) Without removing the lid, remove the pot from the burner and allow to stand 5 minutes.
  5. Remove lid and fluff with a fork.

      I have not ever made it with brown rice. I imagine you could. You would need to adjust the cooking time, and maybe it would need more liquid? It might be worth a try!

      I’ve made this recipe three times and have only used brown rice. I cook it the same way as the instructions above and it turns out great!

    I love this recipe! I’ve made it many times for my family. Recently I made it for my daughter’s graduation party and had several people ask for the recipe. I made six batches the day before the party, then put it in two big casserole dishes and reheated in the oven on low temp on party day. It was perfect!
