Dutch Baby Pancakes

When my kids were younger, this was an old standby (but not just for breakfast!)  Many dinners consisted of Dutch Baby Pancakes, Polish Sausage and fresh fruit!  They always loved it!  It’s easy to make and if you haven’t been to the grocery store to replenish your fridge, you can probably make this with what you already have on hand.

Preheat oven to 400°. Put your 13 x 9″ pan in the oven with 5 T. butter and allow it to melt in the pan while the oven is heating.  (The batter sizzles when you pour it in and this makes a great, crispy crust!) Meanwhile, blend together on low speed:

6 eggs
1 1/2 c. milk (if milk is room temperature, it will puff higher!)
1 1/2 c. flour

Pour batter into the hot, melted butter that has been melting in the pan. Bake 20 minutes at 400°.  Serve immediately. (It will lose it’s puffy volume after it sits.) Sift powdered sugar over top. and serve with hot syrup!  (Or try it with my Homemade Apple Cider Syrup!)

Makes 6 – 8 servings.

If you want to make round Dutch Babies, just pour the batter into 2 pie pans!
