DIY Instant Potato Soup Mix

During cold weather, I love a bowl or mug of soup. Sometimes, I get home from work and I’m too tired to make dinner. My husband usually eats a bigger mid-day meal and often wants to skip dinner.  Often, I come home from work hungry and find myself scrounging around the kitchen for a quick  bite to eat.  I can make a mug of this soup in just a couple of minutes.  I also take it with me for lunch in a little sandwich bag so I can just fill my mug with hot water and stir in this mix.  It’s easy and it tastes so good!

1 ¾ c instant mashed potatoes*

1 ½ c. non-fat dry milk powder

2 T. instant chicken boullion granules

2 t. dry minced onion

1 t. dried parsley

¼ t. pepper

¼ t. dried thyme

1/8 t. turmeric

½ t. seasoning salt

Combine all ingredients in a medium sized bowl and mix well. Store the dry mix in a quart-size jar.

To use, mix ½ cup of the dry mix with 1 cup boiling water in a bowl or mug.  Stir and allow to stand for 1 – 2 minutes.  The soup will thicken upon standing.  Stir and enjoy!

You can make this as a gift and tie a cute tag on the jar with the directions!

*It’s also really good with the loaded mashed potatoes (they have a bacon flavor!)
