Normally, I’m not a huge cucumber fan, but when it comes to these Armenian Cucumbers, I love them marinated in apple cider vinegar. The best thing about Armenian Cucumbers is that they don’t have to be peeled. The peel is as tender as the flesh. When sliced, the edges look scalloped like a cute little flower!
To make life easy, I slice them up using my Mandoline Slicer. It makes all of the slices uniform in thickness and it slices them quickly. I can do a bunch in a minute or two!
1 large Armenian cucumber
¼ c. cider vinegar
½ c. water
¼ c. sugar (or Splenda works too!)
¼ t. salt
Dash or two of pepper
Dash or two of onion powder
Allow to marinate 2-3 hours. Serve chilled.
