Slice and Bake Cookies are just about the easiest and most convenient cookies to make. I like to make up the dough and keep it in my freezer for when I need it. Then, I can slice off a few cookies at a time and they are freshly baked whenever I want! If you need a quick dessert, these are perfect!
You probably have most of these ingredients in your pantry right now, so go ahead and make some!
1 cup butter, softened
1 cup sugar
1 cup brown sugar, packed
1 teaspoon vanilla
1 cup quick oats
2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
2 cups crisp rice cereal
Cream the butter and sugars together. Add the eggs and vanilla. Mix until creamy. Add the remaining dry ingredients, stirring in the crispy rice cereal last. Shape into three 8″- long logs, wrap in wax paper and keep in a zipper seal bag. Freeze until firm.
To bake up the cookies, slice the frozen dough in 1/4″ thick slices while frozen and place on a Parchment lined
baking sheet, about 2″ apart. Bake cookies at 375° for 6 to 8 minutes, or until golden. (The cookies will be flat.) Allow to cool on the pan.
When cool, if desired, dip half of the cookie into melted white chocolate or milk chocolate chips. (Or you can drizzle them with melted chocolate.)
Keep the dough frozen and slice off the amount needed. Return the dough to the freezer until ready to slice more cookies.
Makes about 4-5 dozen cookies.
