If you are a frequent visitor to my blog, you know that I love to concoct my own recipes that are inspired by places we eat. Last week, we went to a nearby Scottish Festival. The lines were really long at the food service, so we decided to walk a ways over to a nearby restaurant for lunch. I’m so glad we did. Not only did we get our food faster than we would have if we had stood in the lonnnnng lines at the festival, but I’m sure this was much tastier than the Haggis! At the restaurant, I ordered a Tuscan Chicken salad with Creamy Pesto Dressing and I couldn’t wait to come home and re-create it!
The salad is made up of:
Crisp Romaine lettuce leaves
Oven roasted tomatoes (or you can use sun-dried tomatoes)
tender grilled chicken strips
Toasted pine nuts
Artichoke Hearts, quartered
Shredded Parmesan cheese
The best part of this salad is the Creamy Pesto Dressing!
I decided to make the dressing using Knorr ~ Pesto Sauce Mix. It can be found at most grocery stores or on Amazon.com.
Here’s how I made the delicious dressing:
3/4 cup mayonnaise
1 cup buttermilk
1 pkg. Knorr ~ Pesto Sauce Mix
2 – 3 heaping tablespoons of shredded (or grated) Parmesan Cheese
additional garlic, if desired (to taste)
Into a blender or food processor, combine the ingredients (I love to use my Cuisinart Immersion Blender with Food Processor Attachments) it’s just the right size for small recipes like this!
and blend until smooth.
Makes about 2 cups. Refrigerate until serving time. Drizzle over the Tuscan Salad and
