If you are someone who loves Hummus, this is kind of a newfangled recipe! It has a little different twist than the usual garlic Hummus you may have tried. Cilantro, lime and chili powder give this a unique flavor & the Alfredo Sauce gives it a creamy consistency. It’s perfect to serve with Pita chips, crackers or fresh vegetables.
Here’s how to make it:
½ cup water
1/2 package dry Alfredo Sauce Mix (about 1/4 cup)
1 clove garlic, minced
1 – 15 oz. can Garbanzo Beans, drained (reserve liquid)
¼ tsp. chili powder
1 tsp. fresh lime juice
2 – 3 tbsp. fresh cilantro
a dash of salt (or to taste)
In a microwave safe dish, whisk together the water and dry Alfredo Sauce mix. Microwave on high 1 – 2 minutes, whisking every 30 seconds. The sauce will begin to thicken.
Into a food processor, put the prepared Alfredo sauce and the remaining ingredients. I love to use my Cuisinart Stick Blender with Food Proceesor Attachment for small recipes like this!
Process until smooth. (If needed, you can add more liquid that reserved from the Garbanzo beans (or if you prefer, you can use olive oil) about a tablespoon at a time – just enough to get a creamy consistency.)
Serve with fresh vegetables, crackers or Pita Chips. Refrigerate any leftovers.
