The thing I love about Betty Crocker Sugar Cookie Mix is, you don’t just have to make plain old ordinary sugar cookies! I use this as a base for a delicious, chewy, gourmet cookies with all kinds of different mix-ins. The cookie I am featuring in this post has white chocolate chunks, Craisins and Macadamia nuts mixed in. I have also used this sugar cookie mix and I added oatmeal, toasted coconut and milk chocolate chips! If you love a soft, chewy cookie, start with this mix and add your own creative touch. HERE is a link to my “Sunny Side Up Cookies” made with this same cookie mix. The mix is available in most grocery stores or on Amazon.com.
I pouch Betty Crocker Sugar Cookie Mix
1/2 cup butter, softened
1/2 cup white chocolate chunks (or white chocolate chips)
1/2 cup Craisins (dried cranberries)
1/2 cup Macadamia nuts, chopped
Combine the dry mix, the butter and the egg and mix just on low speed with an electric mixer just until combined. Use a large spoon to fold in the white chocolate chunks, Craisins and nuts.
Scoop into golf ball size balls of dough and place on a parchment lined baking sheet at least 2″ apart. Chill 30 minutes.
Bake at 350° for about 14 – 16 minutes or until the cookies are just starting to turn golden on the edges.
Remove the baking sheet from the oven and allow to sit on the hot baking sheet another 2 minutes. Remove cookies from baking sheet and place on a wire rack to cool. Makes 18 cookies.
