If you love a soft, tender, dinner roll, this recipe is definitely for you. I got this recipe from my sister-in-law, Alicia a couple of years ago. She is an amazing cook. Everything she makes is absolutely delicious! I think what sets these apart and makes them as light-as-a-feather is an unusual ingredient not found in most dinner roll recipes! You’ll never guess it, so I’ll just tell you. It’s Applesauce!
Here’s what goes into them:
1 ½ c warm water
2 pkgs. yeast
7 c. flour, divided (give or take)*
1/3 c. total (applesauce + a little bit of oil)**
1/3 c. honey
2 t. salt
Combine warm water, yeast and 2 cups of the flour. Let rise until double. Then add in rest of ingredients in your Bosch Mixer with dough hook assembly. **(You may or not need all 7 cups of the flour. Just add enough flour until the dough cleans the sides of the mixing bowl.) Mix on medium speed for 6 minutes. **(To combine the applesauce and oil, I put 2 tablespoons of oil in the measuring cup and then add the applesauce to measure 1/3 cup.)
Put in a warm place, cover with a clean kitchen towel and allow to rise until double in size. Punch down dough and shape into desired shapes. Cover with clean kitchen towel and let rise until double.
Bake at 400° 12-14 minutes or until golden.
