This time of year, our Apricot tree is loaded with Apricots, so I always make a couple of batches of Apricot Jam. My homemade Apricot Jam is the base for the sauce on these Apricot Glazed Kielbasa Appetizers! For variety, I served these to my family (instead of chicken wings) with my Hawaiian Haystacks for our Sunday get together! As it cooks, the juices from the Kielbasa combine with the sweet and spicy sauce to make an AMAZING sweet & savory bite! If you don’t have homemade Apricot jam, store bought is fine too.
Start by slicing 1 pound of Kielbasa (smoked sausage) into 1/4″ slices. Brown them in a skillet over medium-high heat. Place into the crock pot that has been sprayed with non-stick spray.
In a bowl, stir together:
1 jar (12 oz.) Apricot Jam
1 tablespoon Dijon Mustard
1/2 teaspoon fresh grated ginger (or 1/8 t. powdered)
1 tablespoon lemon juice
a dash of cayenne pepper (optional)
Pour over the browned sausage pieces and stir gently to coat the pieces.
Cook on low setting about 3 hours (or 1 1/2 hours on the high setting) until the sauce is bubbly. Serve hot with toothpicks. (This is also delicious served over some hot, fluffy white rice as a main dish!)
