They say that necessity is the mother of invention. Well, I guess you could say that I invented these Apple Crumb bars! (In other words, I ran out of raspberry jam and decided to use apple pie filling instead!) Wow! Were they good! I was planning to make these raspberry crumb bars, but ended up making Apple Crumb Bars for our Sunday dinner dessert instead.
The next thing I knew, the entire 13 x 9″ pan of Apple Crumb Bars was gone! (My 6-year-old granddaughter told me that her dad ate them all!) Hmmm…
The recipe for Raspberry Crumb Bars is found on themamasgirls.com (click HERE.) But, in a pinch, you could use pie filling instead of jam, like I did. I have been dreaming about trying Blueberry Crumb Bars with blueberry pie filling. (Or what about lemon pie filling?)
1 box yellow cake mix, dry
1 1/2 cups quick oats, dry
3/4 cup butter, melted
1 can apple pie filling
Preheat oven to 375°.
In a bowl, combine the dry cake mix and the dry oats. Add the melted butter and stir until the mixture is crumbly.
Press 2/3 of this crumb mixture into a 13 x 9″ pan and press down to cover the bottom of the pan.
Pour the apple pie filling onto the crumb crust and spread out evenly. (The apples should be in a single layer.)
Top with the remaining crumb mixture.
Bake at 375° for 25 minutes. Cool and cut into bars.
